We already have seen amboli recipes. Amboli is made in different ways in each area. Today we will see how amboli is prepared in Poladpur, a small village near Mahabaleshwar. Amboli can be healthy and tasty breakfast option. You can pack it for your kids’ lunch box too. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1/4 cup Varai / Samo seeds
• 1 tsp Chana dal
• 1/2 tsp Fenugreek seeds
• 1 tsp Coriander seeds
• 1 cup leftover Rice
• Water
• 1 tsp Wheat flour
• 1/4 cup Rice flour
• Salt to taste
• Water
• A slice of Onion
• A small piece of hot Charcoal
• Oil
Method:
• Take varai in a blender jar.
• Add chana dal, fenugreek seeds, coriander seeds and blend it into flour.
• Transfer it into a bowl.
• In the same blender jar add leftover rice, water and blend it into fine paste.
• Strain the paste into the varai flour.
• Add wheat flour, rice flour, salt and mix everything well together.
• Add water to adjust the consistency and mix well.
• Keep a slice of onion on the batter and a hot charcoal on it.
• Add oil on the hot charcoal and cover it with a lid.
• Rest it as it is overnight. Do not remove the lid or even charcoal from the better.
• Next day remove the onion slice along with charcoal from the fermented batter.
• Mix the batter well once.
• Heat up a pan on medium heat.
• Brush a little oil on it.
• Mix amboli batter well once and add the batter at the center of the pan.
• Spread the batter evenly.
• Roast amboli well until lower side gets light golden color.
• Spread a little oil on the upper side.
• When lower side gets nice light golden color, flip the amboli over and roast it well from other
side too.
• When amboli is roasted well from both the sides, take it off into a dish.
• Amboli is all ready.
