Carrot cake. This can be another way to make you kids to have carrots. This is eggless and we are making it in pressure cooker. It is also healthy as we are using wheat flour to make the cake. Try this simply delicious, tasty, yummy, soft, moist and healthy carrot cake. A very easy and simple recipe..

Ingredients:
• Salt for layering in the cooker
• 1/2 cup + 3 tsp Milk (At room temperature)
• 1/4 cup powdered Sugar
• 1/4 cup Brown sugar
• 1/4 cup Oil
• 1 cup Wheat flour
• 1 tsp Baking powder
• 1 tsp Baking soda
• 1/4 tsp Nutmeg powder
• 1/2 cup grated Carrot
• 2 tbsp chopped Walnuts
• Few Raisins

Method:
• Preheat the cooker. For that, add a thin layer of salt at the bottom
of the cooker and preheat it on medium heat for 10 minutes.
• Add a thin layer. No need to add more salt.
• Take 6” baking tray. Line it with wax paper and grease it with oil
from all sides.
• You can use ghee or butter instead of oil.
• Take milk which is at room temperature into a bowl.
• Add powdered sugar and brown sugar. If you don’t have brown
sugar, you can use all powdered sugar. Mix well.
• Add oil and mix well again.
• Add wheat flour. It should be a little coarse. It is better to use
store bought wheat flour.
• Add baking powder and baking soda. Mix well and sieve it into
mixture.
• Add nutmeg powder. You can use cinnamon powder or
cardamom powder instead of nutmeg powder. Mix everything well
together.
• Add more milk to adjust consistency.
• Add carrot, walnuts and raisins. You can use cashew nuts or
almonds or pistachios instead of walnuts. Mix well again.
• Egg less carrot cake batter is already.
• Pour out the batter into greased tin.
• Take the preheated cooker.
• Put a dish that come with cooker at the base of it so that the base
of the cake won’t burn.
• Put the cake tin on it.
• Cover it with lid. You can use lid of cooker too. But you need to
remove its whistle and ring.
• Bake the cake on medium heat for about 30-35 minutes.
• Insert a toothpick at the center of the cake.
• If it comes out clean, the cake is baked well.
• Also the sides of cake loosen up from the tin.
• Let it cool down for about 10-15 minutes.
• After 10 minutes, loosen up the sides of cake with the help of
knife.
• Flip it over on a cooling rack.
• Remove the wax paper.
• Let it cool down completely.
• Cut it into pieces. Carrot cake is already.
