Ingredients:
Chicken
1 tsp Ginger-Garlic paste
Finely choped Green chili
Water
Finely chopped Spring onion
Shredded Cabbage
Finely chopped Red capsicum
Boiled and mashed Potato
1 tsp Chili sauce
Black pepper powder
Salt to taste
1/2 cup Maida/ All purpose flour
2 tsp Corn flour
Sevai
Method:
Take chicken into a pan. Add ginger-garlic paste, green chili and
mix well.
Add water, cover and cook for about 10 minutes.
You also can cook chicken in cooker until 1 whistle.
When the chicken cools down completely shred it.
Hold one side of chicken with a knife and shred it with a fork.
Separate it as much as possible.
You can shred the chicken as fine as you want.
Add spring onion, cabbage, red capsicum, potato, chili sauce,
black pepper powder, salt and mix everything well together.
You can add veggies of your choice.
In a bowl take maida. Add corn flour, salt and mix well.
Add a little water at a time and make a little thick batter.
The consistency of batter should neither be too thick nor too thin.
It should have medium consistency.
Take the cutlet mixture and make medium size cutlets.
Dip the cutlets in the maida batter and transfer then into sevai.
Coat them well with sevai by pressing it a little.
Again transfer the cutlets back into maida batter and coat well
with it.
Transfer the cutlets back into sevai and coat them again with
sevai.
This method is double coating. This gives fantastic crisp to
cutlets.
You can follow single coat method too.
Heat up oil in a pan. When oil is enough hot drop the cutlets in it.
After frying for about 3-4 minutes from one side flip them over.
Fry well from other side too.
Take the cutlets out into a dish and chicken cutlets are ready.
You can have these as it is.
These go fantastic with sauce or raita or biryani raita too.
You can transfer the double coated cutles into zip lock bag and
freeze them.
You can fry such cutlets whenever you want.
