Today we are making kachhi chicken biryani. You don’t have to take lot many efforts. I will be giving lot many tips and tricks to make perfect kachhi chicken biryani. Chicken gets nice cooked and it is really juicy and not dry. Rice also gets nicely cooked and it turns out nice, fluffy and separated. It looks nice and tastes just awesome. We already have seen chicken dum biryani recipe. This is another delicious recipe for you. Kachhi biryani means raw chicken and rice will be cooked together on dum. Ingredients:
• 1/2 cup Curd
• 2 tsp Red chili powder
• Finely chopped Coriander leaves
• 1 Cinnamon stick
• 5~6 Cloves
• 4~5 Peppercorns
• 2~3 slit Green chilies
• 1 tsp Ginger-Garlic paste
• 1 tsp Coriander powder
• 1/2 tsp Cumin powder
• 1 tsp Biryani masala
• Salt to taste
• Mint leaves
• 500 gm Chicken
• 500 gm whole Basamati rice
• Water
• 2 Bay leaves
• 1 Cinnamon stick
• 2 green Cardamom
• 4~5 Cloves
• 4~5 Peppercorns
• Salt to taste
• 1/2 tsp Ghee
• 1~2 tsp Oil
• 2~3 Ghee
• 1 tsp Biryani masala
• Saffron water
• Mint leaves
• Finely chopped Coriander leaves
Method:
• In a bowl take curd, red chili powder, coriander leaves, cinnamon, cloves, peppercorns, green
chilies, ginger-garlic paste, coriander powder, cumin powder, biryani masala, salt, mint leaves
and mix everything well together.
• Wash chicken really good and transfer it into the bowl. Mix well.
• Cover and transfer it into freeze for marination preferably overnight.
• Take the chicken out of freeze at least 1 hour before making biryani.
• Wash rice really good with water and soak it in enough water for at least 30 minutes.
• Drain all the water from soaked rice and keep it aside.
• Heat up water in a pan and add bay leaves, cinnamon, green cardamom, cloves, peppercorns,
salt, ghee.
• When water begins to boil, add soaked rice and cook for just 5 minutes.
• Take a pan and add oil, marinated chicken.
• Transfer rice from boiling pan directly on chicken and spread it evenly.
• Add ghee, biryani masala, saffron water, mint leaves, coriander leaves.
• Cover and cook in low to medium heat for 45 minutes.
• Turn off the gas and let the biryani be in the pan for another 5 minutes.
• Open the lid and check. Chicken biryani is all ready.
