Bhogichi bhaji is a traditional Maharashtrian recipe. Generally this sabzi is prepared a day before Makar Sankranti. You can call is traditional mix veg or undhiyu recipe. It is also known as “Lekurwali Bhaji” in Marathi. We already have seen one recipe of bhogichi bhaji. But this is a little different as we are using green masala for this. It tastes nice and goes fantastic with bajarichi bhakari. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 2 tsp Oil
• Peeled and chopped Potato
• Pavta / Lima beams
• Ghevada
• Val papdi / Flat green beans
• Harbhara / Fresh Check peas
• Chopped Carrot
• Lal pavta
• Fresh Green peas
• Green chilies
• Garlic cloves
• Shredded fresh Coconut
• Coriander leaves
• Water
• Chopped Bringle
• Ber / Jujube fruit
• 1 tsp Oil
• Salt to taste
• White Sesame seeds

Method:
• Heat up oil in a pan.
• Add potato, pavta, ghevada, val papdi, harbhara, carrot, lal pavta and mix well.
• Fry for 2 minutes and cover and steam in medium heat really good.
• Remove the lid and mix the veggies well after 3-4 minutes.
• Add fresh green peas and mix well.
• Again cover and steam for until veggies are half cooked for about 7-8 minutes.
• Take green chilies, garlic cloves, fresh coconut, coriander leaves, water in a blender jar and
blend everything into coarse paste. Green masala or vatan is all ready.
• You can skip garlic if you don’t want.
• After steaming the veggies for about 7-8 minutes, when veggies are almost cooked add vange
and mix well.
• Cover and steam for about 5-6 minutes again.
• Add bore and mix well.
• Cover and steam for about 3-4 minutes.
• When veggies are almost cooked, remove the lid and move the veggies along the edge of the
pan.
• Add oil in the remaining space in the pan and add 4-5 tsp fresh green masala.
• Fry the masala in oil for about 2-3 minutes.
• Mix the masala with the veggies really good.
• Add salt and mix well.
• You can add water to adjust the consistency if you want rassa bhaji.
• Fry the veggies really good for about 3-4 minutes.
• Add white sesame seeds and mix well.
• Bhogichi bhaji is all ready.
• It goes fantastic with bajarichi bhakari.
