Today’s recipe is Kolhapuri veg pandhara rassa. Pandhara rassa and that too veg? Wondering, aren’t you? But yes, today, we will make veg pandhara rassa. This recipe doesn’t have chicken or mutton!! This is a healthy and tasty recipe. This is a treat for vegetarians like me!! There are lot many veggies in this rassa. It not only looks nice but also tastes super delicious. It is rich, creamy and flavorful Marathi recipe. It has lot many different veggies those are boiled in white gravy. You also can call this white curry. This is aromatic, flavorful and rich traditional Maharashtrian gravy recipe. Try this recipe at home and write to me. You also can like, share and subscribe.

Ingredients:
• Cauliflower florets
• Broccoli florets
• Chopped Onion
• Chopped Carrot
• Chopped Potato
• Salt to taste
• Water as needed
• 4~5 Garlic cloves
• Chopped Ginger
• Soaked Cashew nuts
• Soaked Poppy seeds
• Soaked Melon seeds
• 2~3 tbsp Ghee
• Cloves
• Black Peppercorns
• 1 Star anise
• 1 Cinnamon stick
• 2~3 Bay leaves
• 3~4 Green chilies
• Salt to taste
• 2 cups Coconut milk
• Cardamom powder
• Finely chopped Coriander leaves

Method:
• Boil cauliflower, broccoli, onion, carrot, potato, salt and water together to make vegetable stock.
• You can use the veggies those are readily available in your kitchen.
• Blend ginger and garlic together to make paste and take it out into a bowl.
• Soak cashew nuts, poppy seeds and melon seeds together in enough water for about 2-3 hours
and transfer it into a blender jar.
• Blend it well together into fine paste and take it out into a bowl.
• When the veggies are cooked well, strain the water from it and keep the veggies aside. Vegetable
stock is ready.
• You can use the veggies to make bhaji or pavbhaji.
• Heat up ghee in a pan and add cloves, black peppercorns, star anise, cinnamon, bay leaves, green
chilies and mix well.
• Add ginger-garlic paste and mix well.
• Add the cashew nuts paste and fry well until its raw smell is removed.
• When oil begins to release from the masala, add the vegetable stock and mix well.
• Add salt and mix well.
• Add coconut milk and mix well.
• Bring the mixture to boil.
• Add cardamom powder and mix well.
• Garnish with coriander leaves and veg pandhara rassa is ready.
• You can have it as soup. Or serve it with peti pav or garlic bread.
