मराठी स्नॅक कोबीच्या वड्या करण्यासाठी लागणारे साहित्य

• १ चमचा जिरं
• १ चमचा ओवा
• १ कप थालीपीठाची भाजणी
• १/२ चमचा हळद
• २ चमचे धनेपूड
• १ चमचा लाल तिखट
• चवीनुसार मीठ
• जरुरीनुसार पाणी
• पांढरे तीळ
• तळण्यासाठी तेल

Today’s recipe is Marathi snack kobichya vadya. This is a very easy and simple recipe. These turn out nice and crispy. Besides, you can store the steamed vadya in freezer for about a month and fry whenever you want. Very few people like kobi or cabbage. But if you make these vadya, then I am sure, everyone will love it. These turn out nice, crispy and crunchy outside and soft inside. This is an authentic, traditional Maharashtrian recipe. You can call it cabbage fritters!! This is a very healthy and tasty recipe. I am sure you can’t stop after eating your first vadi. Try this recipe at home and write to me. Ingredients:
• Finely chopped Cabbage
• 1/2 bunch finely chopped Palak
• 2 small finely shredded Carrot
• 4 Garlic cloves
• 6 Green chilies
• 1 tsp Cumin seeds
• 1/4 tsp Ajwain / Carom seeds
• 1 cup Thalipeet bhajani
• 1/2 tsp Turmeric powder
• 2 tsp Coriander powder
• 1 tsp Red chili powder
• Salt to taste
• Water as needed
• White Sesame seeds
• Oil for frying

Method:
• Wash cabbage really good and drain all the water from it.
• Wash palak palak really good and drain all the water from it.
• Chop it finely and add it into cabbage.
• Add carrot and mix everything well together.
• Blend garlic, green chilies, cumin seeds and ajwain well together into coarse paste in mixer and
add it to the vegetable mixture.
• Add thalipeeth bhajani, turmeric powder, coriander powder, red chili powder and salt and mix
everything well together. Press the veggies a little while mixing.
• You can use combination of 1/2 cup jawar flour, 1/4 cup besan, 2 tbsp rice flour, a little wheat flour
and if possible poha powder in place of thalipeeth bhajani.
• Add water and mix well. The mixture should get enough binding.
• Grease a deep dish well with oil and sprinkle sesame seeds in it.
• Transfer the dough in it and spread it evenly.
• Sprinkle sesame seeds on upper side and pat it carefully.
• Heat up water in a steamer and place a stand at the base.
• Place the dish on it and close the lid.
• Steam vadya on medium heat for about 20-25 minutes.
• Check with a knife. If it comes out clean, it means the vadi is steamed well.
• Take the dish out and let it cool down completely.
• Loosen the edges and and flip the dish over into a dish.
• Cut it into pieces.
• You can store these vadya in an airtight container in freezer for about 3-4 months and in freeze for
about 15 days.
• Heat up oil on medium heat in a pan and drop vadya into it.
• Fry vadya well until they turn nice and crispy from both sides.
• When vadya are fried well form both sides, take them out, drain excess oil and transfer them on a
wire rack. Kobichya vadya are ready.
• You can have it as it or roll them in a chapati, add salad and sauces and roll it. Enjoy the roll.
