We are preparing for the auspicious occasion of Ganesh festival. It is a popular Indian dessert or sweet recipe. The fried khoya balls are dipped in sugar syrup which is flavoured with cardamom, saffron. These just melt in mouth and taste awesome. These are similar to gulabjamun but darker than it. As these are darker they are called kala jamun. How to get that perfect color, texture must be a question in your mind. You will get all the answers in this video. Are you eager to know more? Ingredients:
Sugar Syrup
• 2 cups Sugar
• 1 cup water
• 3 Cardamom
• 10~12 Saffron strands
Stuffing
• 1 tsp Pistachios
• 1 tsp chopped Cashew nuts
• 1 tsp chopped Alomnds
• 1 tsp chopped Chironji
• 1/4 tsp Cardamom powder
• 1 tsp Sugar
• Few Saffron strands
• Yellow food color
Kala Jamun
• 1 cup Mawa / Khoya
• 1/3 cup Paneer
• 1/2 tbsp Suji
• 1/4 cup Maida
• 1/4 tsp Baking powder
• Oil for frying
• Silver Work
Method:
Sugar Syrup
• Heat up a pan on medium heat and add sugar, water.
• Add cardamom, saffron and bring it to boil.
• Continue boiling until a white line appears along the edge of the pan.
• Check the syrup between thumb and index finger.
• When a thick thread takes shape between your fingers, it means syrup is ready. Turn off the
gas.
Stuffing
• Mix pistachios, cashew nuts, almonds, chironji, cardamom powder, sugar, saffron, yellow
food color and a little khoya dough well together. Stuffing is ready.
Kala Jamun
• Knead mawa and paneer together until it becomes nice and soft and comer together like
dough.
• Add suji, maida and knead it well together for about 8-10 minutes.
• Add baking powder and knead well again.
• Take small portion from the dough and make it smooth even round ball.
• Make small, equal balls from the stuffing and keep them aside.
• Make a small diya from the dough ball and fill in the stuffing ball in it.
• Press the stuffing well and bring the dough cover together.
• Seal it well and make sure there are no cracks on the ball.
• Heat up oil in a pan on low to medium heat until it is warmer and drop rolled balls into it.
• Just move the pan and avoid use of any spoon or fork.
• When jamuns get brown color from lower side increase the heat and fry well until it gets dark
brown color from all sides.
• When jamuns are fried well take them out, drain excess oil and transfer into warm sugar
syrup.
• Let them soak well in sugar syrup for at least 5-7 minutes and take them out into a dish.
• Garnish with sliver work and kala jamun is all ready.
