मटकीची उसळ

 चिमूटभर हिंग

 १ चमचा गोडा मसाला
 १ चमचा लाल तिखट
 १ कप मोड आलेली मटकी
 चवीनुसार गूळ

 चवीनुसार मीठ
 जरुरीनुसार पाणी
 खोवलेलं ओलं खोबरं
 बारीक चिरलेली कोथिंबीर
सुधारस
 १ कप साखर

Traditional Seemant Pujanachi Thali

Seemant pujanachi thali is a traditional thali. The puja that is performed the
night before wedding is Seemant pujan. It is celebrated in Maharashtrian
weddings. In old days the menu for this day used to be very simple. The star
recipe used to be “Sudharas.” Today’s thali is no onion and garlic thali recipe.
We are making matakichi usal, koshimbir and of course Sudharas. Sudharas is a
sweet recipe and it is very and simple. The thali itself looks nice and tastes just
awesome. This can be a good dinner menu on some weekend if you are bored
of having the same food. Puri and varan bhat being simple and we have
already have seen those recipes, I won’t show you those. Rest all other recipes
we will make one by one. You can try this thali at home and drop a commet
for me. Do not fotget to like, share and subscribe.
Ingredients:
Koshimbir
 Finely chopped Tomato
 Finely chopped Cucumber
 Finely chopped Coriander leaves
 1/2 cup Curd
 Salt to taste
 1/4 cup Sugar
 1 tsp Red chili powder
 Roasted Peanut powder
Matakichi Usal
 1 tsp Oil
 1 tsp Mustard seeds
 1 tsp Cumin seeds
 Curry leaves
 A pinch of Hing
 1/4 tsp Turmeric powder
 1 tsp Goda masala
 1 tsp Red chili powder
 1 cup sprouted Matki
 Gudh to taste

 Salt to taste
 Water as needed
 Grated fresh Coconut
 Finely chopped Coriander leaves
Sudharas
 1 cup Sugar
 1/2 cup Water
 Few Saffron strands
 Juice of 2 Lemons
 Cardamom powder
 Sliced Pistachios
Method:
Koshimbir
 Mix tomato, cucumber, coriander leaves, curd, salt, sugar, red chili
powder and mix well.
 Add roasted peanut powder and mix well. Koshimbir is ready.
Matkichi Usal
 Heat up oil in a cooker and add mustard seeds.
 When mustard seeds pop up add cumin seeds, curry leaves, hing,
turmeric powder, goda masala, red chili powder and mix well.
 Add mataki and mix well.
 Fry matki for few minutes and add gudh, salt.
 Mix well and add water.
 Close the lid and cook on medium heat until 1 whistle.
 Add fresh coconut and mix well. I
 f you want you can cook the usal for few more minutes.
 Add coriander leaves and matkichi usal is all ready.
Sudharas
 Heat up a pan on medium heat and add sugar, water and saffron.
 Mix well and cook it for about 7-8 minutes.
 Check the consistency. The syrup should have single thread consistency.
 Turn off the gas and let it cool down a little.

 Add lemon juice, cardamom powder, pistachios and mix well. Sudharas
is all ready.
 You can add banana or pineapple if you want.
