२ प्रकारची लोणची बाणण्यासाठी लागणारे साहित्य
लोणच्याचा मसाला
• १ मोठा चमचा धने
• १/२ मोठा चमचा बडीशेप
• १/४ मोठा चमचा जिरं
• १/२ चमचा मेथ्या
लसणीचं लोणचं
• १/२ कप मोहरीचं तेल
• १/२ चमचा हळद
• ३ चमचे लाल तिखट
• १२५ ग्रॅम लसूण
• २ मोठे चमचा मोहरीची डाळ
• चवीनुसार मीठ
लसूण-हिरव्या मिरचीचं लोणचं
• ३~४ मोठे चमचे तेल
• कमी तिखट हिरव्या मिरच्या
• १०~१२ लसूण पाकळ्या
• १/४ चमचा हिंग
• १ चमचा लाल तिखट
• चवीनुसार मीठ
• १ चमचा मोहरीची डाळ
• अर्ध्या लिंबाचा रस

Ingredients:
Masala for Pickles
• 1 tbsp Coriander seeds
• 1/2 tbsp Fennel seeds
• 1/4 tbsp Cumin seeds
• 1/2 tsp Fenugreek seeds
Garlic Pickle
• 1/2 cup Mustard oil
• 1/2 tsp Turmeric powder
• 3 tsp Red chili powder
• 125 gm Garlic
• 2 tbsp Mohrichi dal / Split yellow Mustard
• Salt to taste
Garlic-Green chili Pickle
• 3~4 tbsp Oil
• Less spicy Green chilies
• 10~12 Garlic cloves
• 1/4 tsp Hing
• 1 tsp red chili powder
• Salt to taste
• 1 tsp Mohrichi dal / Split yellow Mustard
• Juice of 1/2 Lemon
Method:
Masala for Pickles
• Heat up a pan on medium heat and add coriander seeds, fennel seeds, cumin seeds.
• Mix well and roast it on medium heat until they are hot enough.
• Turn off the gas and add fenugreek seeds.
• Let’s the mixture cool down a little. Do not over roast the spices.
• If you are using mustard seeds, roast them well with these spices.
• Blend the roasted spices into coarse powder in mixer and the pickle masala is ready.
Garlic pickle
• Heat up mustard oil on medium heat in a pan.
• When the oil is hot enough, turn off the gas and add turmeric powder and red chili powder.
• Let the oil cool down completely.
• Peel the garlic and add mohrichi dal, blended masala, salt and the oil.
• Mix everything well together and garlic pickle is ready.
• Store it in a glass jar and let it marinate for about 8 days.
• You can have it once the pickle is well marinated.
• If you want to make instant pickle then add the garlic cloves in hot oil and fry well. Later add the
remaining spices and mix well. You can have it immediately. But it has very short shelf life of
about a week.
Garlic-Green chili Pickle
• Heat up oil in a pan and add green chilies and garlic cloves. Mix well.
• You can chop the green chilies if you want.
• Cover and cook it together for about 4-5 minutes. Make sure you don’t overcook it.
• Add hing, blended masala, red chili powder and salt.
• Mix well and add mohrichi dal.
• Turn off the gas and mix well.
• Add lemon juice and mix well. Instant garlic-green chili pickle is ready.
• When it cools down completely, you can store it in glass jar in freeze for about 2-3 weeks.
• You can store it at room temperature for about 4-5 days.
