INGREDIENTS OF MUTTON CHUKKA
mutton -1/2kg
small onion-10
oil-2tbs+1tsp
curryleaf-some
coriander leaf-some
pepper-1tsp
zeera-2tsp
fennel seeds-1/4tsp
turmeric-1/4tsp
water-1/2cup
coriander powder-1tsp
garam masala-1tsp
cinnamon-1inch piece
cloves-2
red chillies-4
ginger-1 1/2inch
garlic-10
salt-as needed
green chilly-1

Madurai mutton chukka varuval
add zeera,pepper,fennel,cinnamon,cloves
in dry pan and roast it till aroma comes
dry roast and take out
dry roast red chillies
transfer to plate and let it cool
grind it to fine powder
add 1tsp gingelly oil in cooker
crushed 1 1/2inch ginger, 10garlic
add crushed ginger and garlic in oil
saute till raw smell goes
add cleaned mutton 1/2kg
saute till mutton leaves water
saute till mutton leaves water
add turmeric 1/4tsp and ground powder
add required salt.Mix well
add very little water(less than 1/2cup)
dont add more water, else chukka will become watery
close cooker and keep in high flame
Keep in sim after the steam comes
keep weight after the steam comes out.
let it cook for 15 to 20mins depending
upon mutton nature
If it is tender mutton , 15mins is enough to cook.
If it is hard mutton, keep 20mins to cook mutton
off the stove after 15mins
open the cooker after the gas released
it is cooked soft
add 2tbs oil in pan
add 10 small onions
add curry leaf , 1 green chilly, 1red chilly
add some salt
add coriander powder 1 tsp
add garam masala 1tsp
saute it and then add cooked mutton along with water
keep in high for 5 mins and mix it. Water will be reduced.
Adjust it according to your desired consistency
