Hi friends,welcome to madhu samayal
DIWALI SNACK KARA BOONDHI
It is very easy to make
already i uploaded boondi
laddu check it description link
1cup besan flour
you can increase the quantity if you
make more quantity by double the recipe
rice flour 2tbs
sieve it
cooking soda 1pinch
Turmeric 1pinch
1/4tsp chilly powder
salt 1/2tsp
mix well
add little by little water and
whisk it into lumpfree batter
BATTER CONSISTENCY IS VERY
IMPORTANT FOR BOONDI
You will get tails in boondhi if
batter is thick
if batter is thin,then the boondi will be flat
you can adjust the batter by adding
1 or 2tbs besan flour if the batter is too thin
oil should be very hot before frying
each batch
you can use boondhi ladle or
the flat ladle with holes like this(small holes)
check whether the oil is hot enough to
fry boondi by adding few drops.boondhi should come up once
added in hot oil
keep the batter nearby to fry
pour batter on holes ladle and rotate
NOTE:HOLD LADLE NEAR TO OIL
CLEAN THE HOLES LADLE WELL
BEFORE FRYING NEXT BATCH
This first batch is just for checking the batter
consistency
boondi have tails in it
It means batter is little thick
lets add little water to make batter little
thin
take out the fried boondhi
when it is crispy and bubbles disappears
drain the oil well and add boondi to bowl
remove all fried boondi
Before adding next batch
if you didnt drain oil properly,
then boondhi will be oily
sample first batch has tail in boondi
boondhi should be full round balls
without tails
dont panic when boondi has tails
just adding 1 to 2tbs water to make batter thin
if the boondhi is flat,
then batter may be too thin
or you would have hold the holes ladle far from oil
cleaning ladle before next batch
(this is to clear up blocks and to gets round boondi)
this is batter consistency before adding water
Adjustment
this is right consistency
free flowing batter(not too thick or too thin)
SEE HOW THE BOONDI IS PERFECT
ROUND BALLS
dont crowd one side .
you can use boondi ladle so that
the work is completed easily
using small ladle normal holes ladle will
take more time
PERFECT ROUND BOONDI
THIS IS TOTAL AMOUNT OF BOONDI
GOT FROM 1 CUP BESAN FLOUR
keep oil in sim flame
fry cashews
you can add groundnut instead of cashews
nice golden brown
add fried cashews to
fried boondi
fry curry leaf till crispy
add to boondi
5garlic crushed
adding garlic is optional
adding fried garlic gives
nice aroma to boondi
mix well
you can add chilly powder
or pepper powder
pepper powder 1/2tsp
salt
mix well
transfer to air tight
box .It will be good for 1 week
