Brinjal Rava fry
with less oil
Best vegetarian side dish or snack
Choose big brinjal for this recipe
Seedless brinjal is best for this fry
cut brinjal into medium round slices
Put the slices in water to prevent
discoloration
I have used half brinjal for this recipe
Other half is used for brinjal chutni
lets coat masala on brinjal
1/2tsp turmeric
1/2tsp pepper powder
3/4tsp garam masal
1tsp chilly powder
pinch hing
salt as needed
mix well
add little by little oil and form
as masala paste
adding oil instead of water helps to
hold the masala in brinjal
coat the masala in brinjal
Mild coating to prevent more spice
Marinate for 10mins
3tbs rava
coat rava on marinated brinjal
press gently to cover all areas
Rava gives crispy fry
shake off excess rava
adding 2tbs rava
Remember to use less masala
and mild coating for perfect taste
Shallow fry the coated brinjals with
some spoons of oil
cook well both sides
fry curry leaf for garnish
