Javvarisi pearl vadam ( sago pearl vadam)

In this method,pearls are visible in vadam
1 cup javvarisi (sago pearls)
rinse well twice and soak in 2 cups of water
for 5 hours
after soaking for 5 hours.It has enlarged in size
And it is soft
add this to boiling water and cook well
water measurement is very important from
soaking process to cooking process
totally 5 cups of water (including
soaking to cooking )need to be added for 1 cup
of sago
added remaining 3cups of water (from 5 cups)
add extra 1 cup of water to use it further if needed
take out 1 cup of boiling water to use it if needed
add soaked sago in boiling water and cook in sim
Flame .stir continousely
after 10mins it has thickened
adding 1/2cup of boiling water from that reserved
1 cup of water
add required salt while cooking sago
FINAL TOTAL WATER MEASUREMENT =
5 1/2CUPS WATER FOR 1 CUP OF SAGO
(2cups =soaking, 3 1/2cups = cooking)
greenchilly paste 1tbs
Hing 1/2tsp
Total cooking time is 20mins
Glossy texture is perfect texture for vadam
off the stove and add lemon juice
lemon juice helps to retain in this consistency
pour vadam on wet and damp cotton white cloth
sun dry these vadams under hot sun for one day
you can even dry under fan if you dont have sun
sprinkle water on back side of the cloth and let it
soak for 2mins and the remove by peeling
after 2mins, vadam is easy to peel from cloth
spread the removed vadams in plate and dry
under hot sun for 2days till moisture goes
fry in hot oil in sim flame both sides
Vadams are ready to fry.It is dried well
and crispy moisture free
store these in air tight
Box and fry these when needed
sago pearls are visible beautifully
