This vathal can be stored for many months and
fry when needed
Peel the kappa
cook this half cooked
water till it gets immersed
salt as needed
close the cooker without weight
keep in high flame till steam comes
steam comes .Keep in sim flame cook for 3 to 5 mins
not more than this else it will get mushy
strain the water and let it cool down
half cooked kappa is cooled down
choose big kappa for this vathal
if it is tender ones,cook for 2mins alone
tender ones will get mushy soon
you can eat it as such it will be yummy
chop it as very thin slices
remove the center fibre
if you cut as big slices,it will be hard after fry
so make sure you cut as thin slices
less thickness will be easy to fry and will be crispy
and easy to bite like chips
let it dry under sun for 2 days till it is moisture free
and crispy
it is dried for 2 days and the kappa vathal is ready to fry
easily breakable too
heat the oil in high flame till it gets hot
keep in sim flame while frying
fry well without burning
just a little color change is enough
it gets cooked fast
you can eat as such or add spices and salt
add salt and chilly powder and toss well
it is very yummy snack or sidedish for rice
store in air tight box for 1 year
sun dry these vathal monthly once to prevent insects
