follow my actions to stay healthy
today lets see how to make javvarisi kool vadam
(Sago fryums)
sago pearls 1 cup
rinse twice and soak in 2cups of water for 5hours
after 5hours, sago pearls have enlarged in size and
soft
grind with 1/2cup of water into fine sago paste
follow the exact water measurement for soaking,grinding
and cooking too
rock salt to be added while cooking
1tbs chili flakes( coarsely ground red chili flakes)
1/2lemon
1/2tsp hing
4 1/2 cups water is heated to boil . Reserve 1cup of
boiling water to use later if needed
add ground sago paste to boiling water and stir continuously
keep in sim flame and stir often till it gets thick
do this in a heavy bottom vessel to prevent burning
mash the lumps while stirring
salt as needed
for vadam less salt is added always
adding reserved water 1/2cup
it should get glossy texture
red chilli flakes

Totally 6 1/2cups water for 1 cup of sago
(water measurement is including soaking,grinding & cooking)
add lemon juice after you off the stove
off the stove.add lemon juice
lemon juice prevent further lump formation and
stay in this consistency
make the white cotton cloth wet and damp
pour on damp cloth as equal size rounds
using plastic cover is not good for health .so use cloth instead
let us pour under hot sun in terrace or balcony
45 vadams from 1cup sago
vadams are dry in a day
remove the vadams from cloth by sprinkling water on
backside of the cloth and leave for 1 to 2 mins and then remove
lets remove all vadams and dry under sun till it is crispy
and moisture free
dont crowd it while sun dry
vadams are ready after 2 days of sun dry
it is crispy
you can increase the amount of sago to make bulk amounts
of vadams for 1 year storage
store these in a air tight container for 1 year
deep fry these vadams in hot oil in sim flame
