Hi friends welcome to madhu samayal
I am Thenmozhi,Mom of madhu
use this summer season to make vathal and vadams
today lets see how to make rice vadam
please check description for pickles ,vathals recipe
rice flour 1 cup
ground green chillies 3
zeera 1tbs
hing 1/2tsp
salt as needed
1/2lemon
put rice flour in a mixing bowl
add 1 cup water and whisk well without lumps
another 1 cup water and whisk it
lump free rice water ready
totally for 1 cup rice flour,we need to add 6cups of
water.already we added 2 cups in it now
remaining 4 cups of water to be added in heavy bottom vessel
let the water boil well
reserve 1 cup of water aside .We can add it if needed further
mix well and add to boiling water .stir continuously
keep in sim flame add slowly.stir with thick wooden
spatula
keep in high flame till it gets thicken
1n 2 mins,it starts to thicken,sim the flame
let the raw smell go and cook well
add reserved 1 cup of hot water to it
lemon juice
make sure there is no lumps
stir often
green chilli paste
zeera
hing
salt as needed
check salt by tasting
it has cooked well .it is boiling
1 cup of vathal batter is taken .Adding some
ground red chillies flakes for color and spice loving
person
In Hot sun, spread the vathal batter in tiny spoons
pour on wet damp white cotton cloth
pour in uniform sizes and give space between each vadam
done
lets see in evening
still 2 days it should be dried in sun till jo moisture
after 3 days of drying under sun
remove vathal from cloth.sprinkle some water on back side
of the cloth .then remove it carefully
remove gently
you can vary the amount of zeera
let this dry for 2 days in hot sun till no moisture left in it
red color due to chilly flakes in this vadam
vadam is dried well
It is crispy too no moisture
it breaks well
NOTE: dont pour water on vathal to remove it from cloth
because it breaks.So ,sprinkle water only on back side of
cloth and not front
lets fry these vadam
fry vadam in hot oil in sim flame
vathal is so perfectly ready.do try and share your
