I got at Roadside shops near
mahaballipuram from sculptor
Ammikal is Old Home appliance
used to grind spices,chutni,etc
we can buy and use this to protect
those old traditions
Ammikal gives Traditional Ambiance
to Kitchen and makes lively
I got this for Rs.750
Ammikal made out of stone is good than maavukal
there are 2 types of ammikal
1.machine cut ammikal
2.Kothukal
machine cut will have round circle grooves
kothukal have small holes in it
kothukal is best but maintenance is
easy in machine cut
If the grooves become smooth, then you
can re-groove it from sculptor
i purchased small size ammi
so i place on kitchen counter top
you can buy big ammikal
if you have place
If you place on kitchen slab,
place thick cloth below it to prevent
scratches and noise
If you are not in apartmentm, you
can place ammikal in floor
Mine is small and portable
I placed ammi near kitchen sink to grind
It is easy to clean near sink
Dont buy very weightless ammikal
it is difficult to grind
clean the dust by brushing it
Do this cleaning process for new ammi before grinding
masala for cooking
wipe it
1tbs Raw rice
dry-grind the raw rice
to remove dust
grind on all the sides
roll over the kulavi all the sides
to remove dust
you can see the dust in rice
Remove it and discard
grind another 1tbs of raw rice
remove and discard it
Lets do Wet grinding now
scrub with steel scrub and clean
Dont use soap to clean ammi
soap enters the pores of stone and mix the food
scrub the kulavi also
since it is easy to carry kulavi
Cleaned in sink
clean well
Raw rice is soaked for 3 hours
for grinding
grind it smooth
sprinkle water while grinding
this removes extra dust in stone
Discard the rice paste
clean the ammi
grind another batch of soaked
raw rice .Repeat this till you get white color
This seasoning and cleaning process
is only for new ammikal.One time process
this ammikal can be transferred to
next generations
discard and clean it
i have ground 4 times totally
till you get white color
clean the area
since it is easy to carry
i clean by lifting
If you have heavy ammi,dont lift
you can use any vegetable peel
or seeds now except bitter gourd
i used bottle gourd
break the big pieces and then grind
discard it
clean it
finally i am grinding few coconut
to ensure no dust
ground 2 times
the cleaning process
overed and no dust in it
clean well
let see how to grind simple coconut
chutni
Place all the necessary ingredients
near ammi before grinding process
grind dry ingredients first
like red chilli
redchillies are difficult to grind so
grind it first
sprinkle water while griding
and dont pour more water
use spoon for redchillies since
skin irritated when you touch it
3redchillies ground well
coconut 1/4cup
pound hard ingredients first and then
grind well
add little by little ingredients
and grind it if you have small ammi like me
1garlic added
1/4cup fried gram
rocksalt some
bring the paste to center and grind
back and forth
aroma fills the kitchen while grinding
benefits of ammikal
food is tasty while grinding in ammi
and healthy too because no nutrients lost
It is a good exercise while using ammikal
strengthens upper body
benefits the acupressure points in hand
stand the kulavi and wipe the chutni
wipe to chutni bowl
and clean well(no soap)
clean well and wipe it dry to
prevent fungus
It is very interesting to use ammikal
i love it
ammikal helps during power off times
wash the cloth which you place below ammi
Better buy ammikal in shops by analysing
it rather than online
