CORN SAMOSA
Ingredients:
for stuffed corn curry:
oil-1 L for deep fry
onions-2
green chillies-4
curry leaves
turmeric-1 tbsp
boiled potato-1 cup
salt-1 tbsp
sweet corn-1 cup
red chilli powder-1 tbsp
coriander powder-1 tbsp
coriander
for samosa dough:
all purpose flour/maida-1 cup
salt-1tbsp
oil-1 tbsp
water-1/2 cup
Process:
Take a pan add some oil, add one cup of chopped onions,4 chopped green chillies, some chopped curry leaves,1 tbsp turmeric. Saute them for 10 min. Now add boiled potatoes and salt, add boiled sweet corn, give a nice mix. Add red chilli powder and mix, add coriander powder and coriander leaves, cover a lid and put the flame to medium flame. Let them cook and save for later.
For dough preparation take a bowl add one cup of all purpose flour, and some salt mix evenly. Add 1 tbsp of oil, add 1/2 cup of water. Make a dough. Separate the dough to equal parts a kneed to a circle shape , now cut into rectangular ribbons. Slightly fry these ribbons on a Tawa. Keep aside. Make as many you like.
Take one rectangular fried samosa ribbon fold to a cone shape and stuff the corn potato curry and seal with maida batter. Our samosa are ready for deep fry.
Take a pan pour oil for deep fry , let the oil fry for 10 min. On the medium flame release the samosas one by one and fry it till it converts to golden brown in colour. Take out and serve hot with some sauce and fried chillies.
