തേങ്ങയില്ലാത്ത വെള്ള ചട്ണി – White chutney without coconut

തേങ്ങയില്ലാതെ ഒരു ഗംഭീര ചട്ണി ഞങ്ങൾ കൊണ്ടുവരുന്നു. ഉള്ളി, വെളുത്തുള്ളി, പച്ചമുളക് എന്നിവയാണ് പ്രധാന ചേരുവകൾ. ദയവായി ഇത് പരീക്ഷിക്കുക.
Ingredients
Sliced onions – 2
Green chilli – 2
Garlic cloves – 3
Fried gram – ¼ cup
Chopped shallots/small onion – 1 tbsp
Coconut oil – 1½ tbsp
Urad dhal – 1 tsp
Mustard – 1 tsp
Red chilli – 1
Curry leaves – 1 sprig
Salt – to taste
Water
Process
1. Heat 3 tsp of coconut oil in a thick bottomed pan over medium flame.
2. Now add 3 garlic cloves and 2 green chillies
3. Sauté this for 1 minute and add 2 sliced onions and a little salt
4. When it turns translucent, turn off the flame and allow it to cool
5. Transfer it into a blender
6. Add ¼ cup of fried gram and a little salt
7. Add a little water and grind this
8. Add a little more water, mix well and keep aside
9. In the same pan heat 3 tsp of coconut oil
10. Add 1 tsp of urad dhal, 1 tsp of mustard seeds and 1 red chilli
11. When it splutters add 1 sprig of curry leaves and 1 tbsp of finely chopped small onions
12. When the onions turn light brown, turn off the flame
13. Now add the chutney and a little more water
14. Check salt. Add if required
15. Mix well
16. It is ready to serve.
17. This would go well with Idli or Dosa
