🌿 Ingredients:
Main Ingredients:
– Amla (Indian Gooseberries) – 10-12, diced 🍋
– Coconut – 1/2, chopped 🥥
– Jaggery – 1 tsp 🍬
– Tamarind – 15-20 g, washed 🍋
– Salt – 1 1/2 tsp 🧂

To Roast and Grind:
– Black Gram (Urad Dal) – 2 tbsp
– Coriander Seeds – 1 tbsp 🌿
– Dried Red Chilies – 7-8 🌶️
– Cumin Seeds – 1 tsp 🌿
– Garlic – 5-6 cloves 🧄
– Ginger – Small piece

For Tempering:
– Woodpressed Groundnut Oil – 2 tbsp 🥄
– Mustard Seeds – 1/2 tsp 🌿
– Cumin Seeds – 1/2 tsp 🌿
– Dried Red Chilies – 2 🌶️
– Curry Leaves – 2 sprigs 🌱
– Turmeric Powder – 1/2 tsp ✨
– Asafoetida – a pinch 🌟

🧑‍🍳 Cooking Steps:
1. Prepare Amla and Coconut:
Heat 1 tsp oil in a pan. Add diced amla and fry for 2-3 minutes until the color changes. Add coconut pieces and fry for another minute. Set aside to cool.

2. Roast the Spices:
Heat 1/2 tsp oil in a pan. Add black gram, coriander seeds, dried chilies, cumin seeds, garlic, and ginger. Fry until aromatic and chilies change color. Let cool and grind into a fine powder.

3. Grind the Chutney Base:
To the prepared powder, add fried amla, coconut, jaggery, tamarind, and salt. Grind into a coarse paste.

4. Prepare Tempering:
Heat 2 tbsp groundnut oil. Add mustard seeds, cumin seeds, dried chilies, curry leaves, turmeric powder, and a pinch of asafoetida. Once they splutter, mix in the prepared chutney.

5. Serve and Enjoy:
Turn off the stove and transfer the chutney to a serving bowl. This tangy and creamy amla kobbari chutney is ready to enhance your meal! 🌶️🥥✨
