INGREDIENTS
1. brinjal – 1/4 kg
2. onions – 1
3. tomatoes – 2
4. green chillies – 4
5. turmeric powder – 1/2 teaspoon
6. chilli powder – 1 teaspoon
7. salt – 1 1/2 teaspoon
8. tamarind – 10 grams
9. tempering seeds

This recipe is also called vankaya recipe
Dice the brinjals and put them in water
Chop the onions and green chillies
Dice the tomatoes also
To a cooker add diced brinjals, tomatoes, chopped onions, green chillies, 1 teaspoon chilli powder, 1/2 teaspoon turmeric powdr, 10 grams tamarind, 1/2 cup water, 1 1/2 teaspoon salt ot salt to taste.
Close lid and cook for 2 whistles
Open liad after cooker cools down
Mash the cooked stuff. They don’t need to be mashed thoroughly
Let’s prepare tempering now
Heat 2 tablespoons oil in pan
Add cumin seeds, mustard seeds, bengal gram and black gram
Fry for sme time and add pieces of 2 dried chillies
As they start to change colour, add curry Leaves and mix
Add mashed brinjal mixture and mix
Cook for a couple of minutes on low flame
Sprinkle coriander leavs and serve
