Brinjal Fry Recipe | Vankaya Fry (Vepudu ) How to make Brinjal Fry in Telugu by Hyderabadi Ruchulu

INGREDIENTS
1. Brinjals – 4-5
2. Chilli Powder – 1 Teaspoon
3. Salt – 1 Teaspoon
4. Cumin Seeds Powder – 1/4 Teaspoon
5. Coriander Seeds Powder – 1/2 Teaspoon
6. Garam Masala – 1/4 Teaspoon
7. Sesame Seeds Powder – 1/2 Teaspoon
8. Turmeric Powder- 1/4 Teaspoon
9. Rice Flour

Cut brinjals into circular pieces. Soak brinjal pieces in salt water for 10 minutes. Salt water is 1/2 teaspoon salt mixed in water. Move them into a different bowl and let them sit for 5 minutes so the water dries out. Prepare masala powder now. To a bowl, add 1 teaspoon chilli powder, 1 teaspoon salt or salt to taste, 1/2 teaspoon coriander seeds powder, 1/4 teaspoon cumin seeds powder, a pinch of garam masala, 1/2 teaspoon sesame seeds powder (optional) and mix. Add this prepared masala powder to brinjal pieces and mix. Add 1/4 teaspoon turmeric powder and mix. Marinate for 5-6 minutes. When brinjal pieces are dipped in rice flour, they tend to become a coating for the pieces and help the masala stick to the pieces. Shake off the excess flour after dipping. Heat oil in a pan. These brinjal pieces could be deep fried or shallow fried. Fry marinated brinjal pieces by dipping them in rice flour and shaking off the excess flour. Flip and fry till they become golden brown and crispy. These chips make a good combination with dal or sambar.
