INGREDIENTS
1. Basmathi Rice – 2 Cups
2. Mint Leaves
3. Green Chillies
4. Diced Onions – 1
5. Whole Garam Masala
6. Potatoes – 1/2 Kg
7. Chopped Onions – 1/2 Cup
8. Green Chillies – 2
9. Ginger Garlic Paste
10. Salt
11. Coriander Seeds Powder – 1 1/2 Teaspoon
12. Cumin Seeds Powder – 1/2 Teaspoon
13. Chilli Powder – 2 Teaspoons
14. Turmeric Powder – 1/2 Teaspoon

Wash and soak basmathi rice.
Peel and cut the potatoes into pieces.
Prepare tempering for potato curry.
Heat 2 tablespoons oil in a pan.
Add chopped onions and fry. Close the lid and cook.
Prepare tempering for bagara rice in the mean time.
Here I alternated the dishes on the stove for ease of taking the video; usually I cook them simultaneously on two stoves.
Heat 2 teaspoons clarified butter (ghee) in a pan. Oil also could be used.
Add 1/2 teaspoon shahjeera, 4 cardamoms, 5-6 cloves, 5-6 small cinnamon stick pieces, 2 bay leaves and fry for some time.
Add diced onion and fry till it becomes transparent.
Check the potato curry now. The onions have turned brown, add 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and fry for a minute. Add potato pieces and fry. Add 2 diced green chillies and mix. Close lid and cook for a couple of minutes.
Check bagara rice now. The onions have turned transparent; add 2 diced green chillies and mix. Cook for a couple of minutes and add 1/2 cup mint leaves. Add 1 teaspoon ginger garlic paste and mix. Add 4 cups water for 2 cups soaked rice, 1/2 teaspoon salt and close lid. Let the water boil.
Check the potato curry in the mean time. Add 2 teaspoons chilli powder, 1 1/2 teaspoon salt, 1 1/2 teaspoon coriander seeds powder, 1/2 teaspoon cumin seeds powder and mix. Add 2 cups water and boil. Add coconut powder if more gravy is desired. Close lid and cook.
Check bagara rice. To boiling water, add soaked basmathi rice and mix. Close lid and cook.
Mix the potato curry. As the gravy thickens, add 1/4 teaspoon garam masala and mix. Add coriander leaves and mix.
For bagara rice, put the stove on low flame and close lid for 5 more minutes.
Mix the potato curry. It is ready to serve.
Raitha/ curd could also be prepared for lunch box.
