Pandumirchi Pachadi is also referred to as Ripe Red Chili Pickle a spicy and tasty recipe. can be stored for a year’s time pairs well hot steaming Rice, Dosa, Idly with a dollop of Ghee.

ingredients:
Ripe Red Chilies: 1 Kg
Salt: 1/4 Kg ( Doddu Uppu)
Tamarind: 1/4 Kg
Garlic: 100 Grams
Cumin Seeds: 2 Tablespoons
Fenugreek Seeds: 1 Tablespoon
Oil: 1/4 Kg
Bengal Gram Dal: 2 Tablespoons
Chili Seeds: 2 Teaspoons
Mustard Seeds: 2 Teaspoons
Cumin Seeds: 2 Teaspoons
Red Chilies: 4 to 5 No’s
Curry Leaves: 2 to 4 Reeds
Turmeric Powder: 1 Teaspoon

Method Of Preparation:
Take 1 Kg Ripe Red Chilis wash and dry them, take 1/4 Salt (granule Salt / Doddu Uppu), 1/4 Kg Tamarind, 100 Gram Garlic.
Take 2 Tbs Cumin Seeds, 2 Tbs of Fenugreek Seeds.
Take off the stalks of the chiles after dried well and chop them all.
Heat a pan and dry roast 2 Tbs of Cumin Seeds for a minute, add 2 Tbs of Fenugreek Seeds.
Roast them until aromatic and change in color, let them cool down.
Grind the roasted Cumin & Fenugreek Seeds into a fine powder in a mixie jar to add it to the Pickle as it enhances the taste.
And store the powder in a bowl for a while, to the same mixie jar add Chili pieces.
Add half the chili pieces or sufficient in the mixie jar grind it into a fine paste.
Then, add half the quantity of Tamarind and half the quantity of salt and transfer them to a mixing bowl.
Now, grind the Garlic coarsely and add it to the mixing bowl.
Then add the remaining quantity of the ingredients and grind it into a fine paste and transfer it to the mixing bowl.
Mix them all well, can be ground soft or coarse as per our choice.
Now, will temper it, the pickle can be tempered once or whenever required.
Heat 1/4 Kg of Oil in a pan add 2 Tbs of Bengal Gram Dal fry for a while.
Add 2 Tsp of Chili Seeds and 2 Tsp of Mustard & Cumin Seeds each. Let them sputter
Add some Red Chili pieces, 2 to 4 Reeds of Curry Leaves and fry, these are optional.
Add some garlic cloves if you wish to, I am adding it.
Add 1 Tsp of Turmeric Powder, put off the flame let the temper cool down.
Then add it to the ground paste mix them all, the Ripe Red Chili Pickle is ready.
Store it in an air-tight dry glass jar, which can be stored for a years’ time.
