METHOD FOR MAKING MUTTON LIVER FRY :
INGREDIENTS
1. Mutton Liver – 1/2 Kg
2. Oil – 3 Tablespoons
3. Chopped Onions – 2 Cups
4. Green Chillies – 2
5. Salt – 2 Teaspoons
6. Turmeric Powder – 1/4 Teaspoon
7. Ginger-Garlic Paste – 1 Teaspoon
8. Chilli Powder – 2 Teaspoons
9. Coriander Seeds Powder – 1 Teaspoon
10. Cumin Seeds Powder – 1/2 Teaspoon
11. Coconut Powder – 2 Teaspoons
12. Garam-Masala Powder – 1/4 Teaspoon
13. Curry Leaves – 1/2 Cup
14. Coriander Leaves – 1/2 Cup
Clean and cut 1/2 kg mutton liver into pieces. Heat 1 teaspoon oil in a pan. Fry mutton liver pieces in the pan. Close the lid and cook on high flame, water will seep out of liver pieces. Cook till the water boils away. Keep stirring. Move it into a different plate. Heat a pan and add 2 tablespoons oil. Add 2 cups chopped onions, 2 diced green chillies, 1 teaspoon salt and mix. Close the lid and let the onions cook till they become brown. Add 1/4 teaspoon turmeric powder, 1 teaspoon ginger-garlic paste, 2 teaspoons chilli powder, 1 teaspoon coriander seeds powder, 1/2 teaspoon cumin seeds powder, 1 teaspoon salt and mix. Add the cooked liver pieces and fry. Add 2 teaspoons coconut powder if desired. Mix and cook on low flame for 10 minutes. Keep stirring in between. Add 1/4 teaspoon garam masala powder and mix. Add 1/2 cup curry leaves, 1/2 cup coriander leaves and mix. Close the lid and cut off the flame after 2 minutes. Serve hot.
