INGREDIENTS
1. Green Mangoes – 3
2. Dried Chillies – 10-12
3. Black Gram – 2 Tablespoons
4. Mustard Seeds – 1 Teaspoon
5. Cumin Seeds – 1 Teaspoon
6. Bengal Gram – 2 Tablespoons
7. Fenugreek Seeds – 1/2 Teaspoon
8. Salt – 2 Teaspoons
This mix could be used for up to 15 days. Peel and chop the mangoes into pieces. Heat 1 teaspoon in a pan. Add 1 teaspoon mustard seeds, 1 teaspoon cumin seeds and fry. Add 1/2 teaspoon fenugreek seeds, 2 tablespoons bengal gram, 2 tablespoons black gram and fry. As the grams start to change colour, add dried chillies and fry. As dried chillies start to change colour, cut off the stove and let the mixture cool down. Add it to a mixie jar. Add 2 teaspoons salt and powder it. Add green mango pieces and grind it. Instant mango pulihora mix is ready. Store it in an air tight container in the fridge. This paste could be used up to 15 to 20 days. Cook rice and let it cool down. Add pulihora mix to the rice and mix. Prepare tempering. We’ll need tempering seeds, 1/2 teaspoon cumin seeds, 1/2 teaspoon mustard seeds, 1 teaspoon black gram, 1 teaspoon bengal gram, dried chillies, curry leaves and ground nuts. Heat 2 teaspoons oil in pan. Add 1/2 teaspoon cumin seeds, 1/2 teaspoon mustard seeds, 1 teaspoon black gram, 1 teaspoon bengal gram and fry. Add groundnuts and fry. Add 2-3 dried chillies, curry leaves and fry. Add 1/2 teaspoon turmeric powder and mix. Add this tempering to prepared rice and mix.
