INGREDIENTS
1. Basmati Rice – 1 Kg
2. Bay Leaves – 3
3. Shahjeera – 1 1/2 Teaspoon
4. Pepper – 1/2 Teaspoon
5. Cardamoms – 5
6. Cinnamon Sticks – 3-4 Small Pieces
7. Cloves – 7-8
8. Green Chillies – 5
9. Mint Leaves – 1/2 Cup
10. Cashew nuts (Optional)
11. Ginger Garlic Paste – 1 1/2 Teaspoon
12. Clarified Butter (Ghee) – 1 Tablespoon
13. Salt – 2 Teaspoons
Since this mix has to be stored for a long time, it cannot be washed with water. So, pour rice on the kitchen towel and wipe it. Heat 1 tablespoon clarified butter (ghee) on a pan. Add bay leaves and all other garam masala spices. Fry for a minute and add cashew nuts. Fry for a minute and add green chillies. Add washed, dried mint leaves. Fry on low flame till green chillies, mint leaves become crispy. Fry on low flame. Add ginger garlic paste. Fry on low flame till ginger garlic paste become crispy. Add basmati rice and mix. Add 2 teaspoons salt or salt to taste and mix. Cut off the stove after 2-3 minutes. Bagara rice mix is ready. Store it in an air tight container. It could be used for up to 2-3 months in fridge and 1 month outside. To prepare 1 cup bagara rice, heat 2 cups water in a pan. Boil the water. Add instant bagara mix is ready. Add clarified butter (ghee) if desired. Close lid and cook. Add brown onions and mix if desired. Close lid and cook for 5 minutes. Serve with favourite curry or raita.
