Store leafy vegetables fresh for long time:
We’ll see how to store green chillies and green leafy vegetables. This is to be done in three steps; Step 1 – Washing/Cleaning, Step 2 – Drying, Step 3 – Storing.

Step 1 – Washing/Cleaning.
Let’s see cleaning first. To preserve green chillies for a long period, we have to remove the stems. Fill half a bowl with water and add 1 cup vinegar. Salt instead of vinegar could also be used. Put the green chillies in that water after removing the stems for about 10 minutes. Soaking the green chillies in vinegar/salt water will kill the germs. Take these green chillies into a different bowl and wash them under running water. Let’s see curry leaves next. Remove the leaves from stem as shown. Put these leaves in vinegar or salt water for 5 minutes. Take these leaves into a different bowl, wash them under running water and drain all the water. Let’s see coriander next. Cut off the roots of corinder as shown. Remove if there is any weed or grass in the coriander and wash them as shown. Let’s see mint leaves next. Cut off the roots of mints and seperate the leaves as shown. Let’s fenugreek seeds next. Cut off the roots of fenugreek and seperate the leaves as shown. If the fenugreek stems are soft enough, cut them with a knife as shown. Let’s see spinach next. Cut off the ends of spinach for upto an inch. Leafy vegetables are to be used as quick as possible after buying them. Store them only if there is no other way. Wash spinach in salt water and clean it thoroughly twice.

Step 2 – Drying.
Let’s dry them now. Dry the green chillies on kitchen towels for an hour. To dry it faster, dab them with an other paper towel to remove the moisture. Do the same for coriander leaves. Dry them in shade till no moisture is left. Dry the spinach on a paper towel and remove the excess water with another towel. The leaves will dry in an hour.

Step 3 – Storing.
Let’s see how to store them now. Put a paper napkin inside a ziplock bag. Put washed and dried green chillies in it. Put another paper napkin on top, cover it, remove the air and seal it. Do the same with curry leaves. Paper napkins absorb the moisture which helps in keeping the veggies fresh for a long time. Put a paper napkin inside a ziplock bag. Put washed and dried coriander leaves in it. Put a paper napkin on top and put another layer of coriander leaves. Cover it with paper napkin remove the air and seal it. To keep spinach for a long period of time; Take an air tight container and put a layer of paper napkins on the bottom. Put a layer of spinach, then another layer of paper towels and cover it with another layer of paper towels. Close the lid of the air tight container. Here I used tupperware containers. Open the air inlet holes. Mint leaves are to be store in the zip lock bags similarly. Let’s see fenugreek leaves. Put paper towel at the bottom of the container, put fenugreek leaves on top and close the lid. Here I used zip lock bags over plastic containers because they occupy less space in the fridge. Put these zip lock bags in a container and put it in the fridge. Replace the paper napkins every 5 days if they become wet.
