By storing green peas when they are available in abundance we will be able to use them for up to 6 months. Here I took 1 kg green peas. Remove the seeds from its outer covering.
Boil water in a bowl. Add 1 teaspoon sugar, 1 teaspoon salt and boil. Sugar will prevent de-colourization and salt will act as a preservative. Add green peas to it. They will sink at first and slowly start to rise later. All the peas will float in 2 minutes. Take a different bowl and put ice cubes or pour ice water in it. Put all the boiled green peas in this cold water immediately. Let it stay for 2 minutes and strain off the water. This process is called blanching. After draining off all the water they need to be freezed. Put them in small containers. Storing them in smaller containers will make using them later easy. It will also prevent defrosting and freezing of green peas again and again if stored in a large container. They can be stored in small containers or in zip-lock bags. Zip-lock bags will save space. Green peas will freeze in 4-5 hours. They take approximately 20 minutes to de-frost. Green peas could be preserved from 6 months to 1 year.
