Let’s see how to make colourful puris. No artificial colours will be used here. This recipe is interesting and healthy at the same time. Let’ see how to make colours first.
Orange colour with carrots:
Add 1 cup peeled and diced carrots to a blender. Add a little water and blend it into a soft paste. Move it into a bowl. This juice can be strained if desired.
Dark pink with beetroot:
Add peeled and diced beetroots to a blender. Add a little water and blend it into a soft paste. Strain the beetroot. Press it with a spoon.
Green colour with leafy vegetables:
Using chopped spinach (fenugreek leaves also could be used), mint leaves, coriander leaves we’ll make green colour. Add washed chopped spinach, chopped coriander leaves, mint leaves, 2 green chillies (optional), and a little water and blend it into a fine paste. This juice can be strained if desired.
Red colour with tomatoes:
Add diced tomatoes to a blender. Add 2-3 dried chillies and grind it into a soft paste. Move it into a bowl.
Yellow colour could be made by adding turmeric powder.
Let’s see how to make puris with these colours.
Plain puri:
To a mixing bowl, add 1 cup wheat flour, a pinch of salt, 1 teaspoon oil and mix. Add ajowan for easy digestion. Add water and knead it into a dough. Move it into a different bowl.
Green puri:
To a mixing bowl, add 1 cup wheat flour, a pinch of salt, 1 teaspoon oil and mix. Add prepared green mixture and knead it into a dough. Adding water is not necessary.
Orange dough:
To a mixing bowl, add 1 cup wheat flour, 1/2 teaspoon salt, 1/2 teaspoon chilli powder (optional) and mix. Add prepared orange mixture and knead it into a dough.
Dark pink dough:
To a mixing bowl, add 1 cup wheat flour, 1/2 teaspoon chilli powder, 1/2 teaspoon salt, 1 teaspoon oil and mix. Add prepared beetroot juice and knead it into a dough.
Red dough:
To a mixing bowl, add 1 cup wheat flour, 1/2 teaspoon salt, 1/4 teaspoon ajowan, 1/4 teaspoon sesame seeds, 1 teaspoon oil and mix. Add prepared tomato juice and knead it into a dough.
Yellow dough:
To a mixing bowl, add 1 cup wheat flour, 1/4 teaspoon ajowan, 1/2 teaspoon sesame seeds, salt to taste, 1/2 teaspoon turmeric powder, 1 teaspoon oil and mix. Add water and knead it into a dough.
We didn’t use any artificial colours here. We only used healthy vegetables.
Let’s make beetroot puri first. Divide the dough into 2 parts. Press it into a chepathi of medium thickness using loose flour. Do the same with all the other doughs.
Lay them one by one on each other. Let’s add carrot flavour first. Place dark pink colour above it. Next comes the plain one. Put them in any desired order. Slowly and carefully roll the chepathis as shown. Fix it so that the dough doesnít come loose. Cut off the ends of the roll. Cut the dough into this wheels. Using oil or loose flour press it into a puri. Deep fry the puris. Heat oil for deep fry. Fry the puris one by one.
