Chintapandu Pachadi | Tamarind Chutney | How to prepare Chinthapandu Thokku in Telugu by Hyderabadi Ruchulu

INGREDIENTS
1. Tamarind – 50 Grams
2. Salt – 1 1/2 Teaspoon
3. Coriander Leaves – 1/2 Cup (Optional)
4. Garlic Cloves – 7-8
5. Dried Chillies – 10-15
6. Fenugreek Seeds – 1/4 Teaspoon
7. Cumin Seeds – 1/2 Teaspoon
8. Coriander Seeds – 2 Teaspoons
9. Sesame Seeds – 4-5 Teaspoons
10. Tempering Seeds

Heat a pan and add 1 teaspoon oil. Add 1/2 teaspoon cumin seeds, 1/4 teaspoon fenugreek seeds, 2 teaspoons coriander seeds and fry. Add 4-5 teaspoons sesame seeds and fry. Add dried chillies. As dried chillies start to change colour, add 7-8 garlic cloves and fry for a minute. Cut off the stove and let it cool. Put this mixture into a mixie jar and add 1 1/2 teaspoon salt and grind it into a powder. To this powder, add soaked tamarind and coriander leaves(optional) and grind it into a soft paste.
For tempering; Heat a pan and add 1 teaspoon oil. Add 1/2 teaspoon cumin seeds, 1/2 teaspoon mustard seeds, 1 teaspoon bengal gram, 1 teaspoon black gram and fry. Add pieces of 2 dried chillies and fry till it changes colour. Add curry leaves, 1/2 teaspoon turmeric powder. Add prepared chutney and mix.

  • 50 gram tamarind soaked in hot water , 1/1/2 tsp salt, 1/2 C cilantro, 8 garic, 10-15 dried chili, 1/4 tsp fenugeek seeds, 1/2 tsp cumin seeds, 2 tsp coriander seeds, 5 tsp sesame seeds. Grind all ingredients to make a paste. For tempering in a pan fry 1 tsp oil with 1/2 tsp cumin seeds, 1 tsp bengal gram, 1/2 tsp mustard seeds, 1 tsp black gram, 2 dried red chili, 1/2 tsp turmeric powder, 1 sprig curry leaves. Add the pureed mixture from above into the pan.
