Chicken Dum Biryani, our authentic Indian delicacy. Pride of Hyderabad. And loved by foodies across India and across the world too. A lip smacking recipe with marinated chicken, fine basmati rice cooked together.
▸ Ingredients:
▸ Chicken : 1 kg
▸ Basmati Rice : 1 Kg
▸ Brown Onions : ¼ Kg (onions deep fried in golden colour)
▸ Caraway seeds : 1 Teaspoon
▸ Cardamom : 4 Numbers
▸ Cloves : 4 Numbers
▸ Cinnamon : 3 to 4 small pieces
▸ Star Anise : 1 Number
▸ Coriander Leaves : 1 Cup
▸ Mint Leaves : 1 Cup
▸ Green Chilies : 3 to 4 Numbers.
▸ Salt : As needed
▸ Red Chili Powder : 4 Teaspoons
▸ Curd / Yogurt : ½ cup
▸ Ghee : 3 to 4 Tablespoons
▸ Oil : 1 Tablespoon
▸ Lime : ½ piece
Method of Preparation:
● Firstly will marinate 1 kg chicken for Chicken Dum Biryani.
● Will prepare a masala paste needed for margination.
● In a mixie jar add ½ tsp of caraway seeds , 4 cardamoms
● Add 4 cloves, 3 to 4 small pieces cinnamon.
● Add 1 star anise, ¼ cup of coriander leaves and mint leaves each.
● Add 4 to 5 green chilies and grind into a fine paste.
● Now will marine chicken, with ½ cup of curd.
● Add ½ cup of brown onions and 3 tsps of salt.
● Add 2 tsps of coriander powder and ½ tsp of cumin powder
● Add 4 tsps chili powder, 2tsps ginger and garlic paste.
● ½ Lime squeezed in along with the masala paste we grinded.
● Mix them all to seep into the chicken, marinate it for 1 hr.
● Now will wash and soak 1 kg basmati rice, soak it for ½ hr.
● Take a vessel with ¾ ths of water, add ½ tsp caraway seeds.
● Add 4 cardamoms, 4 cloves and 3 to 4 small piece of cinnamon.
● Add 3 Bay leaves, 1 tsp salt and 1 tsp oil.
● Half cook the rice or cook it for 60 to 70%.
● Take a thick based vessel.
● Add 1 tbs ghee, layer it with marinated chicken.
● Add the next layer with half cooked rice.
● Top it with brown onions, coriander leaves and mint leaves.
● Then come the 2nd layer of marinated chicken.
● Then goes the last layer with rice.
● Top it with brown onions, coriander and some mint leaves.
● Add some ghee on it.
● Place the vessel on stove, cook it on high flame for 10 min.
● Again to steam cook / dum it, place the vessel on a pan.
● Cook it on high flame for 10 min.
● Now on low flame for 5 more min.
● Our yummy, mouth-watering Dum Biryani is ready.
