INGREDIENTS
1. Gram Flour – 1 Cup
2. Wheat Flour – 1 Cup
3. Mint Leaves – 1/2 Cup
4. Curry Leaves – 1/2 Cup
5. Coriander Leaves – 1/2 Cup
6. Cumin Seeds – 1 Teaspoon
7. Sesame Seeds – 2 Teaspoons
8. Coriander Seeds Powder – 1/2 Teaspoon
9. Chilli Powder – 1 Teaspoon
10. Salt – 1 Teaspoon
11. Ginger Garlic Paste – 1 Teaspoon
12. Chat Masala or Garam Masala – 1/4 Teaspoon
13. Ajowan – 1/2 Teaspoon
14. Turmeric Powder – 1/2 Teaspoon

Puri dough needs to be prepared first. To a bowl, add 1 cup gram flour. Add a pinch of salt, 1/2 teaspoon ajowan and mix. Add water and knead it into a dough. Add 1 teaspoon oil and knead it. Let it sit for 15 to 20 minutes. Let’s prepare stuffing now. To a bowl, add 1 cup wheat flour. Add chopped coriander leaves, curry leaves and mint leaves. Add 1 teaspoon chilli powder, 2 teaspoons sesame seeds, 1 teaspoon cumin seeds, 1/2 teaspoon coriander seeds powder, 1 teaspoon ginger garlic paste, 1/4 teaspoon chat masala or garam masala, 1 teaspoon salt and mix. Add water and mix it into a thick paste. Add 1/2 teaspoon turmeric powder. Make small balls out of the paste. Do the same for puri dough also. Make both balls of same size. Press it with fingers in the middle to make way for stuffing. Place the stuffing ball and cover it with puri dough. Sprinkle dry flour and roll it into a flat puri. Deep fry the prepared puris one by one. Heat oil for deep fry in a pan. Fry puris one by one. Press it lightly with a spoon. After 2-3 minutes flip and fry the other side. If the puris are pressed thin, they will become crispy or else they will stay soft.

  • Cannot this be shallow fried…so much oil and deep frying is a not a healthy options…also you can cook this on the hot skillet or Tavares with melted butter as rotis….much like stuffed parothas….The Indian cuisine has so many fried foods….using healthier options does us to live longer.
