INGREDIENTS
1. Green Mangoes – 25
2. Chilli Powder – 1 Kg
3. Salt – 3/4 Kg
4. Mustard Seeds Powder – 1/2 Kg
5. Cumin-Fenugreek Seeds Powder – 50 Grams
6. Ginger Garlic Paste – 1/2 Kg
7. Garlic Cloves (Optional)
8. Mustard Seeds – 3-4 Tablespoons
9. Dried Chilli Seeds – 2 Tablespoons
10. Cumin Seeds – 3-4 Tablespoons
11. Oil – 1 1/2 Litre

Some people weigh the green mangoes and add chilli powder, salt accordingly. Here for 25 medium sized mangoes, we took chilli powder and salt accordingly. Powder 1/2 kg thin mustard seeds. Powder lightly fried 25 grams cumin seeds and 25 grams fenugreek seeds. Paste of 1/4 kg ginger and 1/4 kg garlic. Here groundnut oil has to be used. Soak green mangoes in water for a minimum of 2 hours. This will make it easier to remove the dust on it. Clean them after soaking and cut off the nodes. Cut them into pieces of desired size. It will be harder to cut them at home, get it cut in the place they were bought. Clean them with water and put it in a strainer. Letís prepare tempering. Heat 1 1/2 litre oil in a pan. Add 2-3 tablespoons of dried chilli seeds. Put oil on low flame after it heats or the oil with overflow. After the chilli seeds start to change colour, add 3-4 tablespoons mustard seeds and mix. Add 3-4 tablespoons cumin seeds and mix. Take care that the tempering doesnít burn or the pickle will taste bad. Add ginger garlic paste slowly or the oil will overflow. Use a bigger pan so that there is a less chance of oil overflowing. Cut off the stove and let tempering cool down. To a big bowl, add 1 kg chilli powder, 3/4 kg salt, cumin-fenugreek seeds powder, mustard seeds powder, peeled garlic cloves and mix. More chilli powder and salt could be added later also after tasting it. Add prepared tempering and mix. Add green mango pieces and mix. More chilli powder and salt could be added after tasting. Mix and keep it aside for 4-5 hours. Mix again and taste it. Store it in a glass jar. It could be used for up to 1 year.
