🌟 Ingredients:
1. Yellow Cucumbers – 1/2 kg
2. Chili Powder – 62.5 grams
3. Salt – 31 grams
4. Coriander Seeds Powder – 2 tsp
5. Cumin Seeds Powder – 1 tsp
6. Fenugreek Seeds Powder – 1 tsp
7. Mustard Seeds Powder – 1 1/2 tsp
8. Curd (Yogurt) – 1/4 cup
9. Garlic, chopped – 1 head
10. Oil – 2 tbsp
For Tempering:
1. Sesame Oil or Groundnut Oil – 3 tbsp
2. Mustard Seeds – 1/2 tbsp
3. Cumin Seeds – 1 1/2 tbsp
4. Dried Chilies – 2-3
5. Curry Leaves – 1/4 cup
📝 Summary:
1. Cut off the stems and remove the seeds of the cucumbers. No need to peel.
2. Chop the cucumbers and add them to a mixing bowl.
3. Add chili powder, salt, coriander seeds powder, cumin seeds powder, fenugreek seeds powder, mustard seeds powder, and curd.
4. Mix well.
5. Add chopped garlic cloves and oil to the mixture and mix again.
6. For the tempering, heat 3 tbsp of sesame oil or groundnut oil in a pan.
7. Add mustard seeds and cumin seeds, and fry until they start to splutter.
8. Add dried chilies and fry until they change color.
9. Add curry leaves and then turn off the stove.
10. Allow the tempering to cool slightly, then add it to the pachadi and mix well.
