Welcome to Hyderabadi Ruchulu! Today, we’re making a crispy and nutritious Ragi Rava Dosa, a quick and healthy South Indian breakfast made with finger millet, semolina, and rice flour.
🍳 Ingredients:
Batter:
🔹 Finger Millet Flour – 1 cup 🌾
🔹 Bombay Rava (Upma Rava) – 1/2 cup 🥣
🔹 Rice Flour – 1/2 cup 🍚
🔹 Curd – 1/2 cup 🥛
🔹 Salt – 1 tsp 🧂
🔹 Water – 2 cups 💧
Seasoning:
🔹 Chopped Onions – as needed 🧅
🔹 Chopped Curry Leaves – a few 🌿
🔹 Cumin Seeds – 1 tsp 🌿
🔹 Chopped Ginger – 1 tsp
🔹 Chopped Coriander Leaves – 3 tsp 🌿
🔹 Chopped Green Chilies – 2 tsp 🌶️
🧑🍳 Preparation Steps:
1️⃣ In a mixing bowl, add finger millet flour, upma rava, and rice flour. Mix well.
2️⃣ Add curd, salt, and water to form a thin and runny batter. Let it rest for 15 minutes.
3️⃣ After resting, mix the batter again and add onions, curry leaves, cumin seeds, ginger, coriander leaves, and green chilies. Stir well.
4️⃣ Heat a pan and grease it with oil using a half-cut onion.
5️⃣ Mix the batter each time before pouring. Pour onto the hot pan in a circular motion.
6️⃣ Spread oil or ghee on top and cook on high flame until crispy.
7️⃣ Once golden brown and crisp, serve hot with chutney or sambar.
