🍃 Ingredients:
For the chutney:
Cucumber – 1/4 kg 🥒
Brinjal – 1/4 kg 🍆
Coriander Seeds – 1 tbsp 🌿
Cumin Seeds – 1 tsp 🌱
Fenugreek Seeds – 1/4 tsp 🌿
Sesame Seeds – 2 tsp 🌾
Green Chilies – 5-6 🌶️
Garlic Cloves – 7-8 🧄
Tamarind – 20 g 🍋
Turmeric Powder – 1 tsp ✨
Salt – to taste 🧂
Oil – 2 tbsp 🛢️
For tempering:
Oil – 2 tbsp 🛢️
Mustard Seeds – 1/2 tsp 🌱
Cumin Seeds – 1/2 tsp 🌿
Dried Chilies – 2-3 🌶️
Curry Leaves – 2 sprigs 🌱

🧑🍳 Cooking steps:
1. Dice brinjals and soak them in salted water to prevent discoloration. Peel, deseed, and finely chop cucumbers.
2. Heat a pan and roast coriander seeds, cumin seeds, fenugreek seeds, and sesame seeds. Move to a plate.
3. Heat 1 tsp oil and fry green chilies until slightly roasted. Set aside.
4. In the same pan, cook diced brinjals with turmeric powder and salt. Add half the cucumber pieces and cook for 2-3 minutes. Turn off the stove.
5. Grind roasted seeds into a powder, then add fried chilies, garlic cloves, and tamarind. Grind coarsely.
6. Add the cooked brinjal and cucumber mixture to the grinder and grind coarsely again. Mash in the remaining cucumber pieces for added texture.
7. For tempering, heat oil and add mustard seeds, cumin seeds, dried chilies, and curry leaves. Mix with the chutney.
