Uppava Pickle, a traditional Teleanagna special pickle made with Sesame Powder tastes super tasty. A different Pickle recipe than the regular one.

Ingredients
Raw Mango: 1 Kg pieces
Sesame Powder: 1/4 Kg roasted and powdered
Ginger Garlic Paste: 100 Grams
Mustard Seeds: 2 Teaspoons
Cumin and Fenugreek Powder: 1 Teaspoon of Cumin Seeds and 1/2 a Teaspoon of Fenugreek Seeds roasted and powdered
Turmeric Powder: 2 Teaspoons
Salt: as needed
Oil: 1/4 Kg ( Groundnut or Sesame Oil)

Method of Preparation:

Summer is the season for pickles, so here we come with a different variant of Pickle, a Telanagana Special referred to as Uppava.
Take Fresh Raw Mangoes for the Pickle, and cut them into the required shape and pieces. I have already washed, cleaned, and used them, if we get them cut from the market wash, pat them dry and use them for the pickle.
The measurements I am giving are for a KG quantity. For a Kg of Mango Pieces take 1/4 Kg of Sesame Seeds, dry roast them, and grind them into a fine Powder.
When grinding the Sesame Seeds, grind them the using the whip/ Pulse button if we run it continuously it forms a lump.
Take 100 Grams of Ginger Garlic Paste, 2 Tsp of Mustard Powder, 1 Tsp of Cumin Seeds, and 1/2 a Tsp of Fenugreek Seeds roast and Powder them.
Take a Tsp of Turmeric Powder, and a few Garlic Cloves, we do not use Chili Powder for this Pickle.
Take 1/4 Kg of either Groundnut Oil or Sesame Oil, I am using Groundnut Oil for the Pickle.
To temper the Pickle, heat 1/4 Kg of Oil in a pan. Add a Tbsp of Mustard and Cumin Seeds each.
Add a Tbsp of Red Chili Seeds, let splutter, and put off the flame add 100 Grams of Ginger Garlic Paste mix well, and let it cool down completely.
In the meantime will mix the Pickle ingredients, in a mixing bowl add Sesame Powder, add Rock Salt as needed, 2 Tsp of Mustard Powder, and Cumin and Fenugreek Powder.
Add a Tsp of Turmeric Powder, a few Garlic Cloves, mix them all well, and the Mango pieces.
It is generally refereed as Uppava or Nuvvula Avakaya. Mix them all together.
Add the temper and mix well, after 2 days as the oil will separate and the Pickle will taste good.
Store it in a glass container, after 2 days we can see how yummy the pickle looks.
Tasty Uppava is ready.
