Ingredients:
Mango: 1 Kg Pieces
Ginger Garlic Paste: 1/4 Kg
Salt: 200 Grams ( ground/ powdered Crystal Salt at home) Dodduppu/ Kalluppu
Chili Powder: 1/4 Kg
Mustard Powder: 2 to 3 Tablespoons
Cumin and Fenugreek Powder 1 1/2 Teaspoon
Turmeric Powder: 1 Teaspoon
Oil: 1/4 Kg Peanut / Sesame Oil
Method of Preparation:
Summer, a season for pickles, and this recipe is a Telangana special recipe with perfect measurements.
Take Fresh Raw Mangoes for the Pickle, and cut them into the required shape and pieces. I have already washed, cleaned, and used them, if we get them cut from the market wash, pat them dry and use them for the pickle.
For a Kg Mango piece, take 1/4 Kg of Ginger Garlic Paste (a paste made with 125 grams of each Ginger and Garlic).
Take 200 Grams of Salt (ground/powdered crystal Salt), 1/4 Kg of Chili Powder (Pachadi Karam Podi/ Chili Powder used for Pickles), and Mustard Powder 2 to 3 Tbsp.
Take a Tsp of Cumin and 1/2 a Tsp of Fenugreek, dry roast, and powder them.
Take a Tsp of Turmeric Powder and a few Garlic Cloves and 1/4 Kg of Peanuts / Sesame Oil.
Initially, temper the Pickle, heat 1/4 Kg of Oil in a pan, add 1 Tbsp of Mustard and Cumin Seeds each along with a Tbsp of Chili Seeds and let splutter.
Put off the flame and add 1/2 the quantity of Ginger Garlic paste to the temper, use a bigger pan otherwise Oil
Let the temper cool down completely.
Take a mixing bowl and add 1/4 of Chili Powder, 200 Grams of Salt, Mustard Powder as needed, 1 1/2 Tsp of Cumin and Fenugreek Powder, Turmeric Powder and remaining 1/2 of the Ginger Garlic Paste, and a few Garlic Cloves to enhance the taste, mix them all together, add the mango pieces and mix well,
Then add the tempered Oil, when it is completely cool or to the normal temperature add it to the pickle mixture.
Mix them all well and let them rest for 2 days so that the taste and flavors infuse and taste good.
After 2 days we can see the Oil has separated, adjust the taste if required, and store it in glass containers.
Ready tasty and spicy Telangana Special Allappva.
