For Kadhi:-
Curd-500ml
Gram Flour (Besan)-!/2 CUp
Turmeric Powder-1/2 tsp
Red Chilli Powder-2 tsp
Ginger-1 inch
Garlic-5-6 pods
Cumin Seeds – 1/2 tsp
Ajwain-1/2 tsp
Fenugreek Seeds-1/4tsp
Asafoetida-1/2 tsp
Bay Leaf-1-2
Clove-3
Green Chilli-3
Curry Leaves-Handful
Whole Red Chilli-3-4
Salt to taste
Oil-2 tbsp
Ghee-1 tbs
Coriander Leaves

For Pakoda:-
Gram Flour (Besan)-1 Cup
Red Chilli Powder-1/2 tsp
Turmeric Powder-1/4 tsp
Asafoetida-1/4 tsp
Ajwain-1/4 tsp
Salt to taste
Oil to fry
Coriander Leaves-handful

Instructions:

To make the kadhi, whisk together the yogurt, gram flour, turmeric powder, coriander powder, red chili powder, garam masala, salt, hing, and water in a bowl until smooth.
Heat the oil in a large skillet over medium heat. Add the cumin seeds, mustard seeds, fenugreek seeds, curry leaves, and green chili and cook for 30 seconds, or until fragrant.
Add the kadhi mixture to the skillet and cook for 5 minutes, or until thickened. Stir in the sugar and water and cook for an additional 2 minutes.
To make the pakoras, whisk together the gram flour, turmeric powder, red chili powder, salt, baking soda, and water in a bowl until smooth.
Add the onion, coriander leaves, and green chili to the batter and mix well.
Heat the oil in a deep frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes per side, or until golden brown and cooked through.
Serve the pakoras hot with the kadhi.
Tips:

For fluffier pakoras, soak the gram flour in water for 30 minutes before adding the other ingredients.
To make sure the pakoras don’t stick to the pan, make sure the oil is hot enough before adding them.
If the pakoras are browning too quickly, reduce the heat to medium-low.
Serve the kadhi pakora immediately for the best flavor
