Dum Aloo is an authentic dish from Kashmir made with baby potatoes/ Small sized potato. Here is the step by step process to make restaurant style dum aloo.
First pressure cook the potato for 2 whistle then fry it with turmeric and chilli powder. Add this fried potatoes to the masala mixture prepared separately.

Ingredients
– Baby Potato/ small sized potat- 10
– Chopped Onion -2
Tomato Puree – 1 Cup
Garlic -5-6 Cloves
Ginger smal size 1Inch
Curd – 1 Cup
Red Chilli Powder – 1 Tea Spoon
Turmeric Powder – 1/4 Tea Spoon
Garam masala – 1/2 Tea Spoon
Cloves -2
Cardamom – 1
Cinnamon – Small Piece (1 cm)
Cuscus – 1 Tea Spoon Soaked for 30
Minutes
You can use 4 Pieces cashew instead of cuscus
Cumin Seeds – 2 Tea Spoon
Kasuri Methi (if you require) – 1 Pinch
Coriander leaf – Chopped
Sunflower Oil – 2 Table Spoon
