1 cup black chickpeas, soaked overnight or for at least 8 hours
2 tablespoons vegetable oil
1 onion, finely chopped
1/2 cup curd
1 tablespoon ginger garlic paste
2 tomatoes, chopped
2 cardamom
3 cloves
small piece cinnamon
1/2 teaspoon fennel seeds
1/2 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1/4 teaspoon garam masala
1/4 teaspoon kasuri methi
Salt to taste
Coriander leaves, for garnish

Dhaba Style Kala Chana

Dhaba style kala chana is a hearty and flavorful chickpea curry that is often served as a main course or side dish at Indian roadside restaurants. This recipe is made with black chickpeas, tomatoes, onions, ginger, garlic, and a blend of spices. The chickpeas are cooked until tender and the curry is rich and flavorful.

Instructions:

Drain the chickpeas and rinse them well.
cook the chickpeas in a pressure cooker by adding 1/4 teaspoon turmeric powder and salt for 15-20 minutes, or until tender
In a large pot, heat the vegetable oil over medium heat. Add crdamom, clove, cinnamon stck, fennel seeds and cumin seeds.
saute for 30 sec
add crushed or finely chopped onion and cook until softened and translucent, about 5 minutes.
Add the gingger garlic paste and cook for 1 minute more.
Add coriander powder, turmeric powder, red chili powder, and turmeric powder. Cook for 5 minutes
add 1/2 cup curd and stir constantly for 2 minutes until oil separate.
add diced tomatoes and cook for a minute
Add the chickpeas and enough water. Bring to a boil, then reduce heat and simmer for 4- 5 minutes
add garam masala, salt and kasuri methi
Serve hot, garnished with coriander leaves.
