Ingredients:
2 tablespoons oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
10 minced garlic pod
1/2 onion, chopped
2 medium potatoes, peeled and diced
100gm okra, trimmed and cut into 1-inch pieces
1/2 teaspoon turmeric powder
1.5 teaspoon red chilli powder
1 teaspoon coriander powder
1/4 garam masala
1 teaspoon amchur powder
Salt to taste
Instructions:
Heat the oil in a large skillet over medium heat. Add the mustard seeds and cumin seeds and cook for 30 seconds, or until fragrant.
Add minced garlic and saute for a minute
Add the onion and cook for 5 minutes, or until softened.
Add the potatoes and mix 1/2 teaspoon turmeric powder and salt to taste then cook for 5 minutes, or until browned on all sides.
Add 1 teaspoon coriander powder, 1.5 teaspoon red chilli powder and cook for another 1 minute
Add the okra and mix 1 teaspoon amchurr powder and 1/4 teaspoon garam masala and cook for 5 minutes, or until softened.
serve hot.
Tips:
To prevent the okra from becoming slimy, add it to the pan towards the end of cooking and as soon as you add bhindi add the reaining spices, amchur and garam masala.
If you like your okra with a bit more spice, add more chili powder.
Serve Aloo Bhindi with roti, rice, or naan.
Variations:
There are many variations of Aloo Bhindi. Some people add tomatoes to the dish, while others add other vegetables, such as carrots or peas. Some people also add yogurt or cream to the dish. Aloo Bhindi can be made with either fresh or frozen okra. Okra is a good source of fiber, vitamins, and minerals. It is also a good source of antioxidants.
