Here I have used normal sized aloo to prepare this dum aloo rather than baby potato. This recipe is the most easiest and flavourful. Dum aloo is made in different ways but Kashmiri dum aloo is altogether different in its preparation and the choice of ingredients. It is prepared with aloo in a spicy mis of kasmiri red chilli, dry ginger powder, fennel powder along with garam masala. to give an authentic taste use the powdered cinnamon instead of cinnamon sticks. Dum aloo is a spicy curry usually made with baby potatoes, but here I am using the normal sized potatoes to make this dum aloo. Dum aloo is widely popular in India. There are many ways to make dum aloo but the most popular and authentic recipe is the Kashmiri dum aloo. Also in most parts of Indian dum aloo is made with Punjabi recipe in a creamy sauce where as the Kashmiri dum aloo is made in a spicy sauce made with the indegenous spices available in the region.
