Here is a recipe for instant dosa:
Ingredients:
1 cup semolina flour (rava or sooji)
2 tablespoon rice flour
1 cup curd (yogurt)
1/2 teaspoon salt
1 teaspoon eno powder
Water as needed
Instructions:
In a large bowl, combine the semolina flour, rice flour and curd.
Add water as needed to make a smooth batter and blend this to make a smooth batter that is slightly thicker than pancake batter.

Heat a dosa tawa or non-stick pan over medium heat.
Pour a ladleful of batter onto the tawa and spread it out into a thin circle.
Drizzle a little ghee around the edges of the dosa.
Cook the dosa for 2-3 minutes per side, or until it is golden brown and cooked through.
Serve the dosa hot with your favorite chutney and sambar.
Tips:
For a crispier dosa, add a little oil to the batter before spreading it out on the tawa.
You can also add chopped vegetables such as onions, carrots, or tomatoes to the batter for a more flavorful dosa.
If you don’t have curd, you can use buttermilk or sour milk instead.
To make sure the dosa tawa is hot enough, sprinkle a few drops of water on it. If the water sizzles and evaporates immediately, the tawa is ready.
