Vermicelli Egg Pulao | Ventuni Home Cooking

Ingredients

Ghee
Vermicelli – 1 cup (250 ml)
Whole spices (Cinnamon, Clove, Cardamom & Bay leaf)
Onion – 1 no. finely chopped
Green chili – 2 nos
Carrot – 1 no. chopped
Green Beans – 3 nos
Green Peas – 1 Tbsp
Tomato – 1 no. chopped
Ginger garlic paste – 1/4 tsp
Salt to taste
A pinch of Turmeric powder
Water – 1 & 3/4 cup
Little Oil
Egg – 4 nos
Pepper powder
A pinch of Chili powder

Method

Heat a pan with some ghee, add vermicelli and roast them till they are golden in color and keep it aside
Heat a kadai with some ghee, add the whole spices and roast them
Add onions and saute them
Add green chilies, carrots, beans, peas and saute everything
Add tomatoes and cook them
Add ginger garlic paste and saute along
Add salt, turmeric powder and mix it along
Add water and close and cook for 5 mins
Add the roasted vermicelli and mix it well
Keep it on low flame and cook the vermicelli
In a bowl, crack open the eggs
Add salt, chili powder, pepper and whisk it well
Heat a pan with some oil, pour the eggs and scramble them
Add the scrambled eggs to the vermicelli and mix it well
Garnish it with some coriander leaves and serve it hot
