Vegetable Pulao Recipe
Ingredients: Basmati Rice – 1 cup (200 ml)
Ghee – 1 1/2 tbsp
Piece of Cinnamon
Few Clove
Bay leaves – 2 nos
Cardamom pods – 3 nos
Onion – 2 nos chopped
Green Chilli – 5 nos (Small)
Ginger paste – 2 tsp
Potato – 1 no.
Carrot – 1 no.
Few French Beans
Few Peas
Few Cauliflower
Salt to taste
Coconut paste – 2 tsp (Optional)
Water – 2 cups
Method:
1. Heat ghee. Add cinnamon, cloves, bay leaves, cardamom, chopped onions & green chillis and saute
2. When the onion turns transparent, add ginger paste & saute for 2 minutes
3. Now add the vegetables (potatoes, carrots, beans, peas, cauliflower). Mix for 2 minutes.
4. Add salt. Optionally Add 2 tsp coconut paste
5. Now add the basmati rice (soaked in water for 30 minutes) and mix gently
6. Add water (twice the amount of rice) and close & cook for 1 to 2 whistles
Your simple vegetable pulav is ready to serve!
Garnish with roasted coconut and serve with raitha of your choice or kurma 🙂
