Tomato Rice – Recipe
Ingredients: Cooked Rice
Tomato – 2 finely chopped
Onion – 1 finely chopped
Green chilli – 1
Salt to taste
Sambar powder – 2 tsp
A few Coriander leaves
Roasted Cashew nuts
For Tempering
Ghee – 2 tbsp
Chana Dal – 1/2 tsp
Urad Dal – 1/2 tsp
Cumin seeds – 1/2 tsp
Mustard seeds – 1/2 tsp
A few Curry leaves
Asafoetida powder a pinch
Method:
1. Add Ghee, Chana dal, Urad dhal, Cumin seeds & Mustard seeds to temper.
2. Once the Mustard seeds starts splattering, add the chopped Onion, Green chilli, few Curry leaves, Asafoetida powder & mix well.
3. Now add finely chopped Tomatoes, Salt to taste & 2 tsp of Sambar powder. Saute the mix till tomato becomes mushy.
4. Then add the cooked Basmati rice & gently mix it.
5. Finally add chopped coriander leaves & mix.
6. Garnish it with roasted Cashew nuts (Optional).
