To Make Masala Powder
Peanuts – 1/2 Cup
Coriander Seeds – 2 Tsp
Cumin Seeds – 2 Tsp
Byadagi Chilli – 8 Nos
Garlic – 3 Cloves
Rock Salt – 1/2 Tsp
To Make Brinjal Fry
Brinjal – 1/2 Kg
Oil – 3 Tbsp
Mustard Seeds – 1/2 Tsp
Urad Dal – 1 Tsp
Chana Dal – 1 Tsp
Hing – 1/4 Tsp
Green Chilli – 3 Nos
Onion – 2 Nos
Curry Leaves

Method:
1. Cut the brinjals into small pieces and put them in salt water for retaining the colour.
2. Dry roast the peanuts in a pan and keep them aside.
3. To the same pan, add coriander seeds, cumin seeds, byadagi chillies and garlic cloves.
4. Roast the ingredients for 3 mins and cool them down completely.
5. Transfer them to a mixer jar, add rock salt and grind it all into a fine powder. Keep the masala aside.
6. Take oil in a pan, add mustard seeds, urad dal, chana dal and let the mustard seeds splatter.
7. Add in hing, green chillies and onions. Roast the onions until they are golden brown in colour.
8. Add the chopped brinjal and roast for 3 mins.
9. Add the ground masala powder and roast the brinjal for 15 mins on a medium flame.
10. Keep mixing to make sure the bottom is not burnt.
11. Once the brinjal is soft and nice, transfer it to a serving bowl.
12. Garnish the curry with chopped coriander leaves.
13. Yummy Brinjal Peanut Podi Fry is ready to be served with plain rice/rasam rice/sambar rice.
Brinjals are one of the best vegetables and we can make many varieties with them. This brinjal fry is a special recipe from down south in India. This has a very special masala powder/podi added to it to enhance the taste of the fry. In fact, all the essential flavor comes only from the podi and in this recipe, I have used peanuts as a base for that flavorful and aromatic masala powder.
